The name faisselle refers to the perforated mold or basket in which the cheese curds are strained. The finished cheese is soft, grainy, and has a tangy, fresh flavor.The cheese is often served with either sweet (jam, fruit) or savory toppings (herbs, olive oil). The molds themselves are also popular decorative or antique collectibles.
